One of the greatest books I've ever read on nutrition and it's impacts on - well everything - is The China Study by T. Colin Campbell. I first heard of him when I went on a cruise for the Holistic Holiday At Sea (If you get a chance you should check it out and go...best cruise ever!). But in any case he was one of the presenters. We loved the non judgmental way he talked, the fact he could back up what he was saying, and the fact that he was a healthy man talking about healthy eating and the implications unhealthy eating has instead of some fat out of shape guy preaching about health.
